Second Helpings: Recycling Cairo?s Food Waste

Forget about candy bars and potato chips?if current trends continue, the term ?junk food? might have an entirely new meaning. In January, a report by the Institution of Mechanical Engineers found that of the four billion tons of food produced globally, approximately half becomes waste. This figure can be attributed to several factors, including stringent sell-by dates and the demand for cosmetically perfect produce. Instead of alleviating hunger, this food often ends up in landfills and produces methane, a potent greenhouse gas that contributes to global warming.

Food doesn?t just become waste, waste also becomes food. The burning of trash produces dioxins; the toxic chemical compounds are environmental pollutants that can potentially be harmful to humans. In recent years, dioxin levels have led to food scares for everything from citrus to products containing eggs. In 2008, sales of buffalo mozzarella dropped by 40 percent and its import was banned in some countries following concerns regarding dioxin contamination. Campania, the region known for the production of the cheese, is also known for problems with illegal trash burning and dumping and the traces of dioxin found were believed to be linked to the trash.

One community in Cairo is doing its part to stop the junk-food cycle. For over seventy years, the Zabaleen have acted as Cairo?s informal waste management providers. Every day, they collect 60 percent of Cairo?s waste. The 8,000 tons of garbage are brought back to Moqattam, the area of Cairo where the Zabaleen reside. There, trash is sorted and managed and nearly 80 percent of all waste collected is recycled; that is four times the rate of formal solid waste management companies.

Organizations including the United Nations have recognized their contribution within the international community. But for the Zabaleen, it?s not always easy being green. Despite campaigns and magazines that attempt to glamorize eco-friendly efforts, the Zabaleen have faced obstacles and stigma surrounding their work.

In 2003, three multinational companies were awarded solid waste management contracts in Egypt. The shift was met with criticism since many Zabaleen had to pay the companies in order to continue collecting garbage. The new system was also seen as less efficient; the multinational firms only recycled 20 percent of waste, with the remainder being burned or deposited in landfills.

The threat of the H1N1 virus in 2009 posed another challenge to the Zabaleen?s waste collection system. In response to the global threat of swine flu, the Egyptian government culled all the country?s pigs. In a decision the World Health Organization described as ?a real mistake,? practically overnight, approximately 400,000 pigs were gone.

The implications for the Zabaleen were twofold. For the predominantly Coptic Christian community, the pigs were an affordable source of protein. They were also an integral part of their complex recycling system, eating Cairo?s organic waste. The measure also had repercussions for the city?with no pigs to feed, the Zabaleen no longer had any use for food waste. Rotting food began to accumulate on the streets, turning the pigless city into a pigsty and the government acknowledged the flaws in its decision.

The Zabaleen continue to collect and recycle garbage, investing in technology, tools, and information that can turn one man?s trash into another man?s treasure. Bottle tops are taken to an aluminum smelter while plastic bottles are sanitized and shredded before being sold to companies that reprocess the materials into polyester. Beyond being profitable micro-enterprises, these recycling techniques decrease the amount of trash that ends up in landfills and oceans.

The Zabaleen are using new methods to address Cairo?s organic waste; some invested in goats to pick up the pieces following the culling of the pigs. While goats are happy to pig out on plants and paper, not all scraps suit their palate. Solar Cities has been installing biodigesters that work off food waste.

Instead of rotting in landfills, in controlled and closed settings like biodigesters, organic waste can be harnessed and converted into biogas, a clean and renewable energy. This can then, in turn, be used cook food?a way of using old food to make new food.

For biodigesters to generate biogas, bacteria breaks down organic matter including food scraps, plant material and livestock manure through anaerobic digestion. The digestion has three main stages. During the first phase, hydrolysis, biodegradable material decomposes into smaller molecules including sugars. Next, these molecules are converted into acids. In acetogenesis, acetogenic bacteria convert sugars into short-chain acids, mainly acetic acid, CO2 and H2. Finally, anaerobic bacteria use hydrogen and acetate to carry out methanogenesis. The acids are converted into methane, creating a biogas made up of around 60 percent methane and 40 percent carbon dioxide.

When the process is complete, the majority of what is produced is a slurry that also makes an excellent fertilizer. The remainder at the top is biogas, which can be used with any type of propane or natural gas stove. A hose runs from the biodigester to the stove, it just needs to be turned on and now you?re cooking with biogas.

Along with the Zabaleen, other residents in Cairo and throughout Egypt are beginning to use biogas. In his book, Garbology: Our Dirty Love Affair with Trash, Edward Humes talks some serious trash regarding the legacy of garbage, ?Each of our bodies may occupy only one cemetery plot when we?re done with this world, but a single person?s 102-ton trash legacy will require the equivalent of 1,100 graves. Much of that refuse will outlast any grave marker, pharaoh?s pyramid or modern skyscraper: One of the few relics of our civilization guaranteed to be recognizable twenty thousand years from now is the potato chip bag.?

Recycling waste and making biogas requires starting the day with a hearty meal. Ful medames is a filling fava bean dish that is part of a traditional Egyptian breakfast. Ful means ?fava? while medames comes from a Coptic word for ?buried.? The name reflects the tradition of cooking the dish by burying a covered pot under hot coals.

These days, we can put a modern twist on cooking an ancient traditional dish. To begin, some meth is cooked up that would make Walter White any renewable energy advocate proud.

Served along with tea, eggs and bread, bioful medames provides fuel for the tummy and biofuel for the day.

BioFul Medames

2 Cups Dried Fava Beans, soaked overnight

1 Large Tomato, diced

1 Teaspoon Cumin Powder

1 Tablespoon Lemon Juice

1 Pinch Red Chili Powder

2 Tablespoons Olive Oil

Salt to taste

After soaking the fava beans over night, drain and rinse them. Add to a pot with enough fresh water so there is enough water to cover them by about 2 inches.

On top of your stove (biogas if you have it), bring favas to a boil then reduce to a simmer.

Add the tomato, garlic, cumin, and chili powder. Cook the beans for about 4 hours or until soft, adding water as necessary.

Mash the beans as much or as little as you?d like, mix in salt and lemon juice. Drizzle with olive oil.

The Reynolds and Reynolds Company gave $500,000 to American Crossroads. Dealer Computer Services has given $200,000 to the pro-David Dewhurst Texas Conservatives Fund and $50,000 to Restoring Prosperity Fund.

    Kenneth Griffin, the head of the massive hedge fund Citadel, has contributed $2.58 million to super PACs. Griffin is ranked 173rd on the <em>Forbes</em> list of richest Americans. In 2008, he helped raise money for then-Sen. Barack Obama during the Democratic primary, but switched to support Sen. John McCain (R-Ariz.) in the general election. Griffin has since become increasingly critical of President Obama and what he considers to be class warfare rhetoric coming from the White House. Soros became famous for his political contributions after he gave more than $30 million to 527 groups to defeat former President George W. Bush in 2004. He has reached a mythological status with some conservatives as a wildly influential figure in world politics. In reported contributions, Soros has given $1 million to American Bridge 21st Century, $1 million to Priorities USA Action (supporting Barack Obama), $425,000 to House Majority PAC and $100,000 to Majority PAC.

The super PAC has been active in Republican Senate primaries backing Richard Mourdock's successful campaign to beat Sen. Dick Lugar in Indiana. The group also also thrown its weight behind Ted Cruz in Texas and Don Stenberg in Nebraska. Stenberg lost his primary to state Sen. Deb Fischer and Cruz faces a run-off election against Texas Lt. Gov. David Dewhurst. The group is also spending money to defeat Sen. Orrin Hatch in Utah. FreedomWorks has been spending money to help elect Tea Party Senate candidates like Cruz and Mourdock in the general election.

    Roadside bomb kills 10 civilians on Afghan bus

    KABUL, Afghanistan (AP) ? A roadside bomb hit a bus in southern Afghanistan on Monday and killed 10 civilians, mostly women and children, officials said.

    Kandahar province's police chief Gen. Abdul Raziq said the blast wounded another 12 people in Maroof district, roughly 60 kilometers (36 miles) northeast of Kandahar city.

    Insurgents plant landmines and roadside bombs in the south and the east of the country to target Afghan and international troops, but civilians often are killed or injured as a result.

    Also, Monday a Taliban spokesman said the four remaining Turkish nationals among a group of 11 people abducted last month by the militant group would be released shortly.

    An email statement from Taliban spokesman Zabiullah Mujahed said the earlier release of another four Turks was intended as a "goodwill gesture" and "soon" the remaining four Turks still in their possession would also be freed.

    He did not make any reference to the Afghan translator and two pilots __ one from Russia and one from Kyrgyzstan __ who were captured along with the eight Turks when bad weather forced their helicopter to make an emergency landing in the Taliban-stronghold of eastern Afghanistan's Logar province on April 21.

    On Sunday Turkey's state-run Anadolu Agency said the freed Turks were taken to the Turkish Embassy in Kabul.

    Seth Meyers named as 'Late Night' host

    "Saturday Night Live" star and head writer Seth Meyers has his next gig set: the host of NBC's "Late Night." The comedian will be taking over the job from current host Jimmy Fallon, whom NBC last month named to succeed Jay Leno as "Tonight Show" host in 2014.

    "We think Seth is one of the brightest, most insightful comedy writers and performers of his generation. His years at SNL's ?Weekend Update? desk, not to mention being head writer of the show for many seasons, helped him hone a topical brand of comedy that is perfect for the ?Late Night? franchise,? said Bob Greenblatt, the chairman of NBC Entertainment, in a statement. ?On behalf of Steve Burke, Ted Harbert and Paul Telegdy, we couldn?t be happier that Seth and Jimmy Fallon will be continuing their careers at NBC after growing up in this network's late night legacy."

    Of his new job, the Emmy-winning Meyers said in a statement, "I only have to work for Lorne (Michaels) for five more years before I pay him back for the time I totaled his car. 12:30 on NBC has long been incredible real estate. I hope I can do it justice."

    Michaels, who is the executive producer of "Late Night With Jimmy Fallon" and has produced numerous seasons of "SNL," will also be working with Meyers on the next iteration of "Late Night."

    "Since 1982, there have been three 'Late Night' hosts starting with David Letterman, and Seth couldn?t be in better company," Michaels said in a statement.

    A premiere date for "Late Night With Seth Meyers" has not yet been announced.

    Long Beach aquarium exhibit peers into ocean's dark depths

    The Aquarium of the Pacific's newest exhibit introduces visitors to an eerie world beyond the reach of sunshine: the bottom of the ocean, a strange seascape of crushing pressure, volcanic fissures and an abundance of cryptic creatures.

    The Wonders of the Deep gallery, which is scheduled to open to the public May 24, will be one of the few places where visitors can marvel over bioluminescent fish and opportunistic scavengers that inhabit the biological oases created by dead marine mammals that sink to the bottom.

    The $560,000 exhibit is also designed to increase awareness about the importance of protecting marine resources and to convey a message: "The deep ocean is a tough place to make a living and get a square meal," Jerry Schubel, the Long Beach aquarium's president and chief executive, said Saturday. Workers were busy installing temperature and filtration control systems, cleaning display windows and lowering a fiberglass replica of a rotting pygmy sperm whale carcass into a large tank that will showcase marine scavengers.

    "Our goal is to make connections between these deep, dark places and people's daily lives," Schubel said. "The ocean supports life-support systems for all life on Earth, including humans."

    Glancing back at the artificial dead whale in the tank, he smiled and added, "I know, it's gross. But kids love gross."

    Because most creatures that exist in the darkest depths of the ocean cannot survive coming to the surface, the aquarium is presenting shallower-water counterparts.

    Among them are flashlight fish, a small black species armed with clumps of bioluminescent bacteria that reside just under their eyes. By using a flap of skin to hide and reveal these lights ? seemingly turning them off and on ? the flashlight fish is able to avoid predators, feed on specks of plankton and navigate through the darkness 1,200 feet beneath the surface.

    Other characters of the deep here include spiral-shaped chambered nautiluses, which travel vertically thousands of feet each day to feed in murky shallows and then hide in places where sunlight is swallowed by the sea. Giant isopods resemble three-pound versions of garden-variety pill bugs. Squat lobsters, which are related to hermit crabs, have claws six times their body length. The spiny species known as the fragile urchin feeds on fragments of dead fish and algae.

    Then there are the slender inshore hagfish, snake-like scavengers that grow up to 2 feet in length and, when spooked, emit thick globs of slime intended to force hungry predators to cough them up and spit them out.

    "Essentially, this animal's defense strategy is to make itself so disgusting no one will want to eat it," aquarist Marslaidh Tryk said as she reached into a bucket of water and lifted up a writhing 2-foot specimen.

    On cue, the hagfish responded by filling her hands with long strings of slime, seemingly as strong and elastic as rubber bands. "Slime aside," Tryk said, "this hagfish is in great shape."

    The living exhibits will be accompanied by live video feeds from ongoing explorations of deep waters around the world conducted by the National Oceanic and Atmospheric Administration's ship Okeanos Explorer and oceanographer Bob Ballard's ship Nautilus.

    "About 98% of the world's oceans are in complete darkness ? and the only light is created by glittering creatures such as the flashlight fish," Schubel said. "So we'll keep this whole gallery as dark as possible."
